Homemade Elderberry Gummies

These are fun to make and take. A great way to use this Homemade Elderberry Syrup.

Ingredients

1 cup Homemade Elderberry Syrup (recipe here)

1/2 cup hot, filtered water (not boiling)

1/4 cup grass-fed, unflavoured gelatin powder (I used to use a brand called Great Lakes, and found it very good, but it no longer seems available in the UK, so I am now using Ossa Organic.

Glass container or silicone molds (I use these)

1/4 teaspoon arrowroot powder (optional)

Instructions

First, you need to do what’s called ‘tempering’ the gelatin powder. This will ensure you get a smooth liquid to pour into the molds. To do this, place 1/2 cup Homemade Elderberry Syrup into a glass jug big enough to hold 2 cups. Add gelatin powder and quickly whisk to combine. The result will be a lumpy, semi-solid mixture.

Add the 1/2 cup hot (not boiling) filtered water and quickly whisk. If you have one, a small whisk is best for this.

Add the remaining 1/2 cup Homemade Elderberry Syrup and whisk well, until all the gelatin has dissolved and the liquid mixture is completely smooth. You should have a smooth, shiny liquid.

If using silicone molds, place these onto a tray or baking tray BEFORE filling them (learn from my mistakes). These molds often come with little pipettes that make filling them a smooth job. If you don’t have these, pour slowly into each mold from the jug. You don’t need molds to make the gummies, though. You can use a glass container. Simply line it with some coconut oil to prevent sticking then pour the liquid in.

To set the gummies, place the molds on the tray into the fridge, or place the glass container into the fridge. Make sure you put them on a flat surface. Leave to set for about 20 minutes. If using silicone molds, your gummies will be ready to pop smoothly out of them. If using a glass container, cut into squares to make individual gummies.

You can coat them in a little arrowroot powder at this stage, to prevent sticking in the jar. But it isn’t necessary. If you want to do this, place 1/4 teaspoon arrowroot powder into a bowl and toss through the gummies.

Store gummies in an airtight container in the fridge. They should be used within one week.
