Blender Banana Waffles

This is a weekend favourite in this house. It’s a recipe adapted slightly from The Wellness Mama Cookbook by Katie Wells, which I really recommend.

The recipe makes enough for a family of 4, with some left over for lunch boxes and snacks or to share with guests.

You will need a waffle iron. I spent quite a lot of time researching which one to get, as I wanted to avoid the non-stick coating typically used. I found a ceramic one and went with this. I’ve been very happy with it.

Ingredients

2 large or 3 medium overripe bananas

4 eggs

1/2 cup coconut flour

1/2 cup almond flour

1 cup coconut milk (recipe to come or use store bought)

1/2 teaspoon aluminium free baking powder (gluten free) - I use Dove’s Farm.

1/4 teaspoon pure vanilla powder (I use a brand called Zest & Zing, organic vanilla powder)

1 teaspoon ground cinnamon

Maple syrup, for serving

Instructions

Preheat waffle iron (keep the kids well away as it gets very hot).

Using a high-powered blender (I use a Vitamix), combine bananas, eggs, coconut flour, almond flour, baking powder, vanilla powder and cinnamon. Blend on high until completely smooth.

Leave batter to sit for 5 minutes, to thicken up as the flours absorb the liquid.

The mixture should be thick and scoopable but not pourable. If it seems too thin, add more coconut flour (1 tablespoon at a time - you shouldn’t need much).

Grease waffle iron with coconut oil - I spoon some into the iron and let it melt into the grooves.

Scoop enough batter into the waffle iron to fill the bottom plate (don’t overfill). Close over the waffle iron (according to manufacturer’s instructions). Bake for 2-4 minutes - waffle irons will vary, so try gently lifting after 2 minutes to see how much longer they will need. The waffles should be formed, with sealed edges and golden brown.

Allow waffles to cool in the waffle iron slightly before gently removing (they will be more delicate than waffles made with wheat flour).

Serve on a platter with bowls of berries and coconut yoghurt (recipe to come or use store bought) alongside, as well as maple syrup. The kids like to serve themselves dishes like this. Although, I keep tabs on the maple syrup!
